We laugh because in Mexico, it is just the fifth day in May, but here, they celebrate it as a Mexican holiday! Kind of out of jest, we celebrate it lightly too. I cooked and served up a great Chimichanga recipe that I know my good friend Melanie will recognize. I first tasted this delicious dish in her kitchen during lunch in High School. It was then published in the Ridgecrest cookbook by her mother some years later. It is the BEST recipe I have ever run into for Chimichangas, with a flavor that needs absolutely no altering! How did I never comment on this post? You brought back some great memories of one of my favorite meals. I'm amazed at the number of friends who have commented over the years of how much they loved eating at my house. My mom is an inspiration!
Still love the chimichangas but now I bake them.
